| Ingredients: 2 tbs olive oil 1 chopped onion 1 peeled and diced spud 2.5cm piece of ginger, grated grated zest of an orange juice of 2 oranges 3 medium cooked beets, diced 1.2 ltr water salt & pepper a little yoghurt |
Method heat the oil in a medium pan. Fry the onion until soft, add the potato and ginger followed by the orange zest and juice then the beetroot and water. Bring to the boil and simmer until the potato is cooked. Blitz. Season and serve with a little yoghurt and orange zest. |
