| Ingredients: 1tbs cumin seeds, toasted in a dry frying pan and then bashed in a pestle & mortar 25g stale bread 200g cooked beetroot 1tbs tahini 1 lge clove crushed garlic juice of a lemon olive oil salt & pepper |
Method Whizz the bread in a food processor until you have breadcrumbs, add the beetroot, tahini, lemon juice, cumin and seasoning. Whizz again to a thick paste, taste and adjust the seasoning to suit. Stir ina good glug of oil and serve. |
