Beetroot is fantastic! Fen’s absolute favourite vegetable, we always have a bowl of cooked beets ready to add to sandwiches & salads.
If your only experience of beetroot was the precooked vinegar soaked rubbish of yester year we urge you to give it another try.
There are serveral varieties of beetroot including
choggia – pink & white stripy with a very mild flavour
golden – bright orange and sweeter than traditional beet. My favourite.

Beetroot is incredibly versatile - try delicious soups, dips, salads, roasts & cakes.
It’s also very good for you packed with vitamins & minerals. Including betaine, a substance that relaxes the mind and is used to treat depression. It also contains trytophan (also found in chocolate!), which contributes to a sense of well being.
Recent research has shown that beetroot can help to reduce blood pressure.
Cooking: Twist off the leaves, leaving the leaf base intact. Trim the root. Scrub. Roast , wrapped in foil, for an hour or boil until tender. When cooked the skin and stem will rub off.
You can eat beetroot raw either very thinly sliced or grated.
